Ingredients of Masala Chicken Recipe

  • 1/2 kg Chicken, washed and cleaned
  • 2 tbsp oil
  • 1 bayleaf (tejpatta)
  • 2 green cardamoms (choti elaichi)
  • 1 stick cinnamon of 1 inch size (dalchini)
  • 4 cloves (laung)
  • 1 cup onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 green chillies, chopped
  • 1/2 cup tomatoes, chopped
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala or chicken masala
  • 2 tbsp coriander leaves

For Marination

  • 2 tbsp yogurt (dahi)
  • 1/2 tsp red chilli powder
  • 3/4 tsp garam masala
  • 1/2 tsp turmeric (haldi)
  • 1 tsp ginger-garlic paste
  • salt to taste

How to Marinate Masala Chicken

  1. Take a deep bowl and add ginger-garlic paste, turmeric powder, red chilli powder, salt, garam masala and yogurt and mix them well to form a paste.
  2. Add the chicken pieces and mix again to cover the pieces with the marinade paste.
  3. Cover and keep in the refrigerator for 12 hours or more.

  1. Put some oil in the pan and heat on low flame. Add cloves, cinnamon, cardamom, bay leaf and saute for 1 minute.
  2. Put onions and chillies and saute till onions turn golden brown.
  3. Add tomatoes, ginger-garlic paste, red chilli powder, chicken masala, salt and cook till the tomatoes are soft and cooked and oil begins to separate.
  4. Put the marinated chicken pieces in the pan and cook on medium flame for 5 minutes.
  5. Lower the flame and cover the pan and cook for 5 minutes more. Turn the chicken pieces to cook fully.
  6. Add coriander leaves and mix well. Now, cover the pan and cook on low flame till chicken is fully cooked and becomes soft.
  7. Adjust the consistency of the gravy according to the requirement. Add some hot water if gravy is thick.
  8. Garnish with coriander leaves and serve hot.
